Spice Giveaway: Kolhapuri Masala

In the last few weeks, I have been the lucky recipient of many incredible foodie gifts, and in the spirit of passing it on, I want to offer the readers of One Hot Stove a taste of one of my very favorite spice mixtures.

I brought back some Kolhapuri masala, the authentic stuff from (where else but) Kolhapur, and I have two packets of this spice to share with you.

This Kolhapuri Masala is fiery stuff, made with chillies, onion, garlic and other spices. It is also known as Kolhapuri chutney and is similar to Kanda-Lasun Masala. I use it for misal (see recipes from My FoodCourt and me). It is also widely used for meat curries, which can be easily converted to egg curry or vegetable curry. It is a tasty and versatile masala and adds a punch of flavor to simple subzis and rice dishes as well.

  1. My favorite summer meal would be cucumber sandwich with some cool drink or curd rice (cooked rice, curd, milk, salt, sugar and a tiny bit of tadka of mustard seeds and hing). It sure is getting really hot and not a good time for people with migraine to be roaming out in the sun as I found the hard way :)

    mango salad (posted on your blog) + strawberry smoothie + chicken/veg club sandwich (whole wheat bread+cucumber+tomato+lettuce+chicken(optional)+ feta cheese on mint chutney).

  8. My favorite summer meal, at the moment is a cucumber sandwich using the English Muffin Bread from a baker at my local farmer's market. I'm looking forward to next week when the tomatoes become ripe because *then* my favorite summer meal will be tomato sandwiches!

  9. Wow!!! Kolhapur masala ......and kohlapur jaggery ..very famous right? My fav summer meal is chappathi,dhal,spicy veg curry and raitha.
    In my last trip to India I was lucky to visit Kohlapur with my whole family... I enjoyed my trip!!!

  10. My favorite meal is for a hot summer day would be chilled curd rice (tempered with mustard, uraddal, greenchillies, ginger, curry leaves and cilantro) along with fried curd chillies. Finish it off with a bowl of pappaya or mango topped with 2 spoons of honey!!:) -SV

    My favorite summer meal would be Cucumber-Dill soup, a really light veggie sandwich and for desert some slightly cooled-fresh-sliced cantaloupe. Another favorite is Dahi bhaat with some Moor Milagai.

My favorite summer meal right from childhood is bhindi pyaaz ki sabzi, rotis sans ghee and cucumber raita with a bit of freshly made mango pickle on the side (while the mangoes are still crunchy). Back in those days, all the veggies used to be weather specific - bhindi, cucumbers etc would be available only in summers and had this fantastic flavor.

  15. When it's really hot, I like a cold soup (avacado, cucumber, or another), a salad of stale bread, tomato, cheese and olives and bread with a spicy spread or dip.

  20. My favourite summer meal would sev dahi batata puri and cold watermelon.
    I tried your palak chana today and it was really really good. I didnt have chana masala so used my own garam masala and used fire roasted crushed tomatoes. I will be making this again like i do with many of your other recipies. keep the good job going.

    This one really forced me to think. Going back the memory lane, I think my favourite meal during a hot summer day would be;
    Kairi ka pannaa (boiled raw mango pulp with sugar and other spices added to it) with some besan/ dal chillas soaked into it or may be some bundi. with fresh rotis any seasonal vegetable (like bhindi or any green veggie without any onion or garlic tadka)
    and to end it some watermelon/cantaloupe/ honeydew melon/mangoes
    Yes that would be a PERFECT summer meal.

    Cool curd rice tempered with curry leaves, mustard, jeera, hing, red chillied and this goes perfectly with freshly made mango pickle with ginger and garlic:)

  34. My very favorite recipe for a hot summer day is honeydew soup. Take the fruit of a melon, puree with vegetable stock and green peas (currently growing faster than weeds, in my garden), chill, serve with mint.

    It's an unusual combination, but completely delicious.

  35. Cold soba noodles with grated Japanese mountain yam (yamaimo), shredded nori, sliced green onions and shichimi pepper spice. Dessert would have to be fresh mango eaten over the kitchen sink so that when the juices drip down your arms and off your elbow you don't make a mess.

    My favourite meal for a hot summer day is amras with poli/chapati or shrikhand with chapati. This used to be our lunch often during the summer holidays.

  42. I love curd rice, but it has to take second to my all time favorite meal has to be watermelon/feta/olive/parsley salad with some good bread. It's a Nigella Lawson recipe, and it is so, so good on a hot day.

  43. Favorite summer meal: Ripe red juicy tomatoes cut into fat slices and arranged on a large plate. Sprinkle sea salt. Add a layer of finely chopped onions, minced green mango, green chillies, and fresh coriander leaves. Splash of lemon juice. Top with lots of crisp kurmura, some sev, and chaat masala. This is my version of a popular street snack in Bangalore called tomato-puri (the puri refers to the kurmura). Serve with a glass of chilled mango or apple milk shake to cool down when the green chili hits.

  48. To those asking about where to buy Kolhapuri masala in Bombay, the answer is that I don't know! I have never needed to look for it in Bombay since I get my supply in Kolhapur, and we also share it with friends and relatives in Bombay, so I simply don't know where to find it there.

    Madhuli- It is far easier for you to drive 3 hours to Kolhapur and get the real thing than to be in the US and enter this giveaway, no? :D

    Ok, my favorite summer meal is a refreshing plate of Gol Gappe from GK market, Delhi, followed by a plate of the absolutely amazing Poori Aloo from Sundar Nagar, Delhi accompanied by a glass of Fresh sweet Lassi. (My god! I am salivating just thinking about this :)

  56. If it is a hot day, I know it is also going to be hot in my kitchen, so I don't like to use the stove. My favorite meal on hot days is something that I don't have to cook. I like a salted lassi with toasted jeera an a simple salad with cucumber, tomato and onion with lime and chapati if I have some made in advance, or I'll cook papadums in the microwave and have with fresh hot onion chutney. If I'm going to cook something on a hot day, I'll cook potatoes and make a large plate of behl puri and serve it cold! I can't think of a better hot day food than chilled behl puri!

    My favorite summer meal would be a nice bowl of chilled dahi wadas...garnished with some tamarind chutney, jeera powder and some cilantro. I also love to have paani-puri and spdp ....items with least amount of cooking involved! :)

  69. Mmmm...yummy Kolhapuri masala, I simply yearn for anything from my hometown.
    My fave summer meal would be a difficult pick, summer brings such an explosion of cool fresh foods and I pretty much like anything cool and fresh! But I have to say my winner meal would be a fruit chaat for starters, a simple phulka and not-too-spicy batata rassa, a li'l bowl of yogurt with boondi on the side and to wash it all down, refreshing watermelon juice and slices of ripe (as long as I'm on my dreamride, I wish for haapus) mangoes for dessert! That's probably a lot of food for a summer meal, but hey it sounds perfect in my head :)-

  70. Crazy as it sounds I usually have pav bhaji, spinach with garlic and black mustard seeds washed down with iced tea. It seems like the more red chili powder I use the cooler I feel.

  72. This is hard - my eating patterns have changed so much recently, but I guess when I think of summer the memorable meals are picnics and the various salads that accompany them. My favorite of these was always "macaroni salad" (which everyone would call pasta salad now), which was not much more than a green salad (sans lettuce), macaroni (our favorite shape - shells), and some mayonnaise thinned with vinegar and seasoned with salt, pepper, and celery seed. Mmmmmmm!

    My favorite summer meal would be Kokum Kadhi (with garlic) + mounds of Rice and Batata Kaapa as a side dish. The curative powers of Kokum is a blessing during hot summers and Mom advised us to gulp down abundant helpings of this yummy summer drink.

  77. Favorite meal on a hot summer day ... has to be Pani Puri ! I can imagine the tang of Tamarind, the tinge of Mint, the thin half-wet stringy Shev, the Ragada and the inter-mingling of these tastes in a single all-consuming un-subtle explosion ! Wouldn't that be something?
    Kolhapuri masala - Bharli Vangi ... great combination. But I haven't been able to find small eggplants here.

    First time writting a comment on your site but I am long time reader. Do love your recipes but more than that I love your posts. I do get the feeling from your posts that we grewup around same time in India and cherish same things.

    About food I would love on a hot summer day would be Ras(Mango Puree) and Puri.
    For evening Falooda would be wonderful or Ice Dish (Shreded Ice topped with serup,cashews,tuti-fruity,kishmish,cream) would be fun too.

  85. My favorite summer meal is a home grown tomato sandwich, there is nothing like it. Good bread, lightly toasted, Best Foods (Hellman's) Mayonnaise, a little salt and fresh ground pepper. Don't let any of the juices get away from you, they are the best part.

    My favorite meal for a hot summer day is my mother's yogurt gravy..It is very similar to the Sindhi Kadi..but much lighter...We have it with rice and it really helps cool down the system!

  93. My Favourite Summer day meal is Takachi kadhi, bhaat, Fanasachi bhaaji and Mango pickle or moramba.
    Then end up the course with Fresh cut Mango halves.
    Enjoy the day with Kairi panhe or Watermelon Juice and a plate of fresh cut cubes of Watermelon and/or cucumber with dash of pepper-salt or just Chaat masala.

    And with most of cold days in CT who would not love to have some HOT! Kolhapuri Masala...

  94. On a hot summer day I love a nice grilled veggie burger topped with hummus and a pepper jack cheese, on a toasted potato roll with tomato, avocado, and arugula. Start off with a cold cucumber soup, and with the burger a side of chilled grilled asparagus. Add a pitcher of sangria and you've got a lovely outdoor summer meal for two.
