It has been a long and chaotic day here at the world headquarters of One Hot Stove. We're getting some repairs done and the home is upside down for a few days. And poor Dale is having a bad day with his back legs giving him more trouble than usual. I've been struggling to help him stand up. Clearly, we have to find a vet soon and take him in- and this is a holiday week so almost everyone is on vacation...
So all I have today is a quick recipe idea. This one comes from my mother who is one for putting creative riffs on everyday meals. The last time she was visiting us, she made this "Chinese omelet". Basically all the vegetables that go into Indian Chinese food- carrots, cabbage, peppers, green onions, mushrooms- are sliced, sauteed and seasoned with soy sauce and lots of freshly ground black pepper and then stuffed into an omelet. You can make the omelet atop a tortilla or not.
This makes for a tasty and hearty breakfast or lunch that will keep you full for hours. Vegetables don't get attention at breakfast, I feel.

ReplyDeleteYour mom's "chinese omelet" reminded me of a crispy rice omelet - uses left-over rice as the base (packed and crisped up in the pan) and then pour the eggs/veggies/soy sauce on top. The rice gets so nice and crispy at the bottom and the whole thing is just YUM!

DeleteSo sorry to hear about Dale, he will be in my thoughts and prayers. Hats off to you for posting amidst all that is going on in your life. The Chinese Omlette sounds yum! I do use up leftover chopped raw veggies in omlette but never thought of adding soy sauce.

Sheels- if you don't use eggs, try rolling the sauteed veggies in a besan cheela. Would be a fusion dish but quite delicious I'm sure! Happy Holidays to you too!

DeleteI comment very rarely but november has been a real treat since you were posting everday. i love your blog. i read your post on cast iron cooking again today since i am considering buying some cookware myself. but i am a bit worried as i m not the best at taking care of my possessions. you mentioned in that post a couple of times that you need patience and care to get the best of cast iron cookware. So what kind of care is needed and i guess patience is in getting it to a nonstick quality if i understood correctly. Can you do a mini post or something on how to care for cast iron?
ReplyDeleteI got the lodge tawa. I have made rotis and toasted sandwiches on it. It is great at maintaining temperature and i love how evenly it heats up. I did a little search and I found that soap should not be used on cast iron. just wash with warm water and a brush. brush with salt if something is stuck on it. Also wipe clean and rub with oil after washing it. not too difficult i think.

Nikita- I'm so glad you like the tawa so far and that you found good info on how to clean it too. No, it is not too difficult. But some people like to throw everything in the dishwasher and they find it too much work. I've found that it is worth it!
